The Salchichón Ibérico de Bellota from Ibéricos Guillen reaches the highest quality level among Iberian sausages and can bear the label "de Bellota". The juicy, fatty, aromatic meat of acorn-fed Ibérico pigs gives this traditional air-dried sausage specialty its unique taste. Unlike the Spanish chorizo, the salchichón is not seasoned with paprika and garlic, but with salt, pepper, nutmeg and coriander. The gentle aging process in drying rooms for several months gives the salchichón its firm structure and develops its exquisite aroma.
